Carne Asada Recipe

 Carne Asada 

"Carne asada" - the term rings clear in Spanish, meaning roasted beef—'carne' for beef and 'asada' for roasted. Yet, in the breadth of Mexico, tradition bends the meaning. Here, the carne asada is not roasted in the shadows of an oven but grilled under the open sky, on a bed of charcoal that speaks of ancient fires.
 

Ingredients

Marinade  

Juice of two limes
1/4 cup chili powder
1 tbsp cumin
1 tbsp Tabasco
Salt and pepper to taste

2 lbs Skirt Steak
 

Directions

Combine the spices.

Marinade the steak for twenty minutes.

Grill over coals - three (3) minutes on each side for rare.

Place to the side cover the pit and let cook an additional twenty minutes for well done.

Let rest seven minutes.

Slice against the grain.

Serve on flour tortillas with sour cream, guacamole, or other cooling condiment.
