 Pineapple and Green Onion Salsa

In the lands that would come to be known as Mexico, the Maya and Aztec peoples held the pineapple in esteem. In its flesh and juice, there was the taste of sun-drenched days and the relentless passage of time, a reminder of a world that thrived long before sails appeared on the horizon.

 

Ingredients

One whole Pineapple diced - About 3 ½ cups of pineapple.

One bunch of Green Onions Chopped

Salt and Pepper to taste

Tabasco Sauce if not using with spicy taco filling.
 

Directions

Step One- Slice Off the top of the pineapple

Step Two- Use a Pineapple Corer to remove the pineapple

Step Three- Chop the pineapple up in bite size pieces

Step Four- remove to ends of the green opines and chop the white and green parts

Step Five- Mix the green Onions with the pineapple in a large bowl. Add salt, pepper, and Tabasco to taste.

Step Six- serve with four favorite tacos
